INGREDIENTS
 

1/2 jar Leafy Greens Scramble
7 large eggs
pinch of salt
1/2 cup flour
1/2 cup milk
1 tbsp. sugar
1 tbsp. oil
Gruyere cheese (or cheese of choice)
Thinly sliced ham

DIRECTIONS


FOR CREPES:
STEP 1

Whisk 1 egg with salt. Pour flour on top, half the milk, sugar, and oil. Whisk batter, then add in the rest of the milk. Continue whisking until all is blended and smooth.
STEP 2
Heat nonstick medium skillet over medium-high heat. Coat with nonstick spray. Use ladle to pour batter into skillet and swirl until batter covers entire bottom of pan. Wait until batter has nearly cooked through before flipping. 

FOR FILLING:
STEP 1

Whisk remaining eggs and add to pan, stirring until set but still runny. Add 1/2 jar of Leafy Greens Scramble. 
STEP 2
Lay crepe on plate. Lay slice of ham on crepe, then layer Gruyere cheese on top. Place 2 large spoonfuls of egg mixture over cheese, and roll them. Serve immediately.
