4 Corn Tortillas
2 Chicken Breasts
2 Cups Shredded Mozzarella Cheese
2 tbsp. Olive Oil
1 Jar Rancheros Scramble
Pre-heat oven to 350°. Heat a pan to medium-high heat and add olive oil. Place chicken breasts in pan and cook fully. Slice into small strips.
Spread jar of Rancheros Scramble on one tortilla. Layer chicken strips over the Rancheros, and sprinkle mozzarella cheese evenly on top. Top with 2nd tortilla. Repeat steps on remaining tortillas.
Place quesadillas on baking sheet and bake in oven for 10 minutes until cheese is melted. Remove and cut into wedges.
Top with sour cream if desired.
